This is wonderful Sicilian street food. Sold anywhere and everywhere.
If you don’t want to go to a restaurant for lunch, buy an arancino and forget about hunger.

And now what we need if we want to cook them ourselves:
300g rice – 1 bag of saffron – 1 shallot
For stew – if you make a filling with meat: 200 g of young beef (minced) meat twisted in a meat grinder, 1 onion, 1 carrot, 80 g of green peas, half a glass of red wine, 500 g of tomato puree
For minced meat – if you make a filling with ham: 80g boiled ham, diced, 80g bread crumbs, 3 egg yolks, 1 mozzarella, salt, oil in an amount sufficient for frying.

Saute finely chopped onions and carrots with peas for a stew. After adding the beef, lightly pour over the dish with wine, then add the tomato puree, leave everything to cook for 2 hours, and let cool.

In another pan, lightly fry the finely chopped shallots in olive oil and add the rice. Fry the whole thing by adding vegetable broth or water and mixing with saffron, then let cool.
Put the rice in your hand, place in the centre a few boiled ham cubes, a slice of mozzarella and form a ball or any other shape, for example, a cone, roll in flour, egg and finally in bread crumbs.
Then fry in boiling oil. After removing from the oil, salt to taste.
